Chef Deming
Chef Chung Deming is a Singaporean chef and founder of The Quarters, a locally-inspired café and modern Singapore cuisine (Mod-Sin) eatery. After leaving a career in finance to follow his passion for food, he became known for creatively reinventing familiar local flavours through inventive dishes that blend heritage ingredients with contemporary techniques. One of his most celebrated creations is the durian crème brûlée, affectionately nicknamed Duriancanboleh — a rich dessert that pairs a crisp caramelised sugar crust with a smooth, silky custard infused with bittersweet Mao Shan Wang durian, which many food lovers consider a standout take on the classic French dessert with a distinctly Singaporean twist.
